Our summer has been hot!
Very HOT!!
We saw more days over 100 degrees than we cared to, with heat indexes exceeding 110.
BUT… fall appears to be here now and we are enjoying it!
Soup is coming back into my mind as I think of menus now.
So I thought I would ask for some of your favorite soup recipes.
Here is one that I found on Lynn’s Kitchen Adventures that I would like to try sometime.
For tonight it is going to be my favorite Broccoli Cheese Soup.
Broccoli Cheese Soup
2 TBSP chopped onion
2 TBSP melted butter
3 TBSP flour
1/2 tsp. salt
1/4 tsp. pepper
2 cups milk
1 cup grated cheese (I use cheddar)
Cook onion and butter until onion is soft. Stir in flour, salt, and pepper. Add milk and heat to boiling. Cook until thick, stirring constantly. Add cheese and stir until melted.
In another pan add 2 chicken bouillon cubes to 2 cups of boiling water. Add 10 oz. fresh or frozen broccoli. Cook until tender. Add cheese sauce and serve with crackers.
Broccoli can be processed in blender before adding cheese sauce, or with a stick blender if you have one.

Sorry Gramma, That picture is a lil deceitful, I guess. I just pulled one off of Google. But the soup is delicious. We all enjoyed it. We are all doing great.

It’s been just plain cold here in Ohio! We went from a high of 96 last week to a high yesterday of 59. Ack. Your body just can’t adjust that quickly to those kinds of temperature changes.
We eat a lot of soup too. Although I don’t have actual ‘recipes’, I’m sure you can google it and come up loads of recipes that are very close. Some of our favorites are corn chowder, lentil and bacon soup and spicy butternut squash soup. I saw a recipe a few days ago for a sweet pumpkin soup that sounds great too.

That lentil and bacon sounds great! I have a hard time finding really good lentil dishes. My family isn’t crazy over them. Thanks, Andrea.

My family isn’t huge on lentils either, but they do love soup. I brown up a couple slices (maybe 4, or whatever we have laying around) of bacon and a chopped onion until everything is crisp and brown and translucent…then I add the lentils, a finely cubed potato, maybe some carrots and lots of good chicken or beef broth. Season it with salt, pepper and a bay leaf. I also substitute the bacon for smoked sausage and that’s equally delicious and more filling if your family is a bunch of carnivores (like mine).

Yummmm… that sounds so good! I think it would also be good with ham. But I definitely need to try it, soon. Thanks!
