Having an abundance of potatoes has given me the privilege of trying new recipes. Here is one that I found on Home Joys. It was delicious! Definitely going in my collection of favorites.

Baked Potato Casserole

5 pounds potatoes, cooked and cubed

1 pound sliced bacon, cooked and crumbled

2 cups shredded cheddar cheese

1 large onion, finely chopped

1 cup mayonnaise

1 cup (8 oz) sour cream (I use my homemade yogurt.)

1 T minced chives

1 tsp salt

1/2 tsp pepper

Combine potatoes and bacon.

In another bowl, combine the remaining ingredients.

Add to potato mixture and toss gently.

Bake in greased dish, uncovered, at 325 for 1 hour or until bubbly and light brown.

This also works well for the crockpot. Put it on low for 2-3 hours.
