Have you ever canned potatoes? It was the first for me also. I am looking forward to finding out what they are like.

These are the simple instructions:

Dig the potatoes from your garden…

Scrub them well, don’t bother peeling them. Cut into pieces the size you prefer (more fit in your jar if you dice or cube them or if they are small, throw them in whole) and pack them in a quart sized jar. Put in 1 tsp. salt and fill the jar with water.Place the jars in your pressure canner, add the 2 quarts of water, and pressure can for 40 minutes at 10 lb pressure.

Anyone else have any experience with this?
